Preparation
At Home: Write “Salmon Chowder Mashers” with a permanent marker on a quart freezer bag. Measure out and pack the dry ingredients in the bag. Pack the oil in a container. Tuck the salmon pouch with the freezer bag. On the Trail or at Camp: Add 2 cups near boiling water, the oil, and the salmon to the freezer bag. Stir well, seal tightly, and put in a cozy for 10 minutes. Fluff the potatoes and eat.

Post Pacific Crest Trail follow up: I didn’t really enjoy Salmon Chowder Mashers. I think I grew tired of the taste of shelf-stable parmesan cheese. And salmon in a pouch was often not available in stores in trail towns. Tuna could almost always be found. And so could flavoured instant mashed potatoes. Mashed potatoes, tuna, olive oil, and cheddar cheese became one of my standby meals. I would buy eight ounces of cheddar cheese at at time in a store (and sometimes also eight ounces of pepper jack cheese – yes, carrying a whole pound of cheese).
